After reading a few of my recipe blog posts you’re probably getting a good idea of what my electronic cookbook will be about.  Balls.  That’s right.  Many, many balls of deliciously yummy finger food.  Breakfast balls, chicken bites, pork pops, beef bubbles…  Of course I couldn’t have beef recipes and not include an American classic – the Cheeseburger.  Seriously, what red-blooded, meat-eating American doesn’t enjoy a burger?  After all, wasn’t Wimpy our childhood hero, living and breathing for the almighty hamburger?  Forever begging, “I’ll pay you Tuesday for a hamburger today“.  I mean, who’s never salaciously uttered those famous SNL words, “Cheeburger, Cheeburger, Cheeburger“?  And naturally, now in the 21st century, it HAS to have bacon on it!

With a room full of party-goers, you better have a lot of these on hand.  As Guy Fieri once said, “You don’t have to eat a whole cheeseburger, just take a piece of the cheeseburger.”

3/4 lb ground Beef
2 tbsp Bacon pieces
1-1/2 slices American Cheese
1/4 cup Romaine Greens
2 tbsp Ketchup
1 tsp Mustard
Salt & Pepper
1 can of Pillsbury Golden Wheat Biscuits (Grands)
1-2 tbsp Butter

Cook the Meatballs
Preheat oven to 350 degrees. Meatballs should be cooked prior to assembly. Cut the soft dark green tops off your romaine lettuce. Mince the romaine greens to yield 1/4 cup. Chop 1-1/2 slices of American cheese into small squares. Use prepared bacon pieces or chop cooked bacon. In large mixing bowl, combine all ingredients: ground beef, ketchup, mustard, romaine greens, cheese, and bacon. Salt & pepper to your taste. With your hands, mix well into one large ball.

Line a cookie sheet with parchment paper. Tear apart large ball into twelve meatballs – about 1 inch in diameter. Place meatballs on lined cookie sheet. Bake them for 20-25 minutes or until cooked completely through.  Refrigerate or let cool for bubble assembly.

Prepare the Bubbles
Reheat oven to 375 degrees. Separate out six biscuits. Split each biscuit in half and form dough into balls about the size of a walnut. Roll or press dough flat (may require a floured surface). Place cooked meatball in center of each dough round. Wrap dough around meatball and seal edges. Place seam side down into lightly greased 9 inch round cake or pie pan. Bake between 20-30 minutes or until golden brown (the time will vary so check them frequently after 20 minutes). Serve warm with ketchup and mustard. This recipe will make 12 meatball bubbles.
