Like many of my recipes, I found this one on Pinterest.  And, like many of the Pinterest pins it didn’t have a recipe to link through to.  But, after a brief Google search I was able to find many recipes similar to this one. I just made it my own way.  I have been looking for something I could make ahead and grab to go for breakfast.  Being sick of cold cereal, unsatisfying yogurts and promising not to stop for a McWhatever, I was determined to find something healthy and delicious.  This is an excellent recipe to use for a brunch or to make a batch and freeze.  (Pop in the microwave and reheat at 30 second intervals.)

4 extra large Eggs
2-3 tsp Olive Oil
1/2 tbs Butter
1 tbs chopped onion
1 tsp minced garlic
1/2 cup Baby Spinach
1 to 1-1/2 tsp fresh or dried Herbs (Sage, Rosemary, Basil, etc.)
3 slices of Swiss Cheese – minced
6 slices of Sweet Ham
2 tbs Heavy Cream

Heat oven to 350. Oil the six inside cups of a muffin tin. Crack eggs into medium mixing bowl. In small pan heat oil and butter. Add onion, garlic, choice of herbs, and spinach. Cook on medium heat until spinach is wilted. Scrape all into mixing bowl with eggs. Add cream and mix well. Place ham down into the muffin cups. Evenly sprinkle cheese into each ham cup. Fill each cup with egg mixture – DO NOT OVERFLOW – fill to about 3/4 full. Bake for 20-25 minutes.

To Store
So they’re ready to reheat, wrap individual cups in parchment paper then in plastic or foil.Use parchment paper to wrap your frozen food items for easy reheating.  Courtesy of
